- 1 cup all-purpose flour
- 1 cup wheat flour
- 1⁄3 cup sugar
- 2 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1⁄4 cup butter
- 2⁄3 cup skim milk
- 1⁄2 cup applesauce
- 2 eggs, slightly beaten
- 1 teaspoon vanilla
- 1 cup milk chocolate chips
directions
- Preheat oven to 400°F.
- Grease 12-18 muffin cups (12 for larger muffins, 18 for regular muffins- 2/3 full).
- In a large bowl, stir together flour, sugars, baking powder, chocolate chips, and salt.
- In another bowl, stir together milk, eggs, butter, and vanilla until blended.
- Make a well in center of dry ingredients.
- Add milk mixture and stir just to combine. DO NOT OVER MIX.
- Spoon batter into prepared muffin cups.
- Now bake for 15-20 minutes or until a toothpick inserted to the center comes out virtually clean.
- Remove muffin tin to wire rack. and cool for approx 5 minutes.
- Remove from tins to finish cooling.
- Serve warm or completely cool.
- feel free to add other ingredients in or substitute fruit for the chocolate chips. also, a little cinnamon in the batter tastes quite good. these muffins also freeze well!.
