Healthy Carrot Cake

"This recipe is based on the wonderful recipe listed here as Vegan Carrot Cake #8925. I tried to make it a bit healthier, and have found using organic carrots makes a big difference in flavor!"

  • Preheat oven to 350 degrees F.
  • Grease a 9x9 inch cake pan.
  • Stir together all dry ingredients except nuts.
  • Mix in carrots, tofu or flax mixture, oil, apple sauce and vanilla.
  • Beat about 2-3 minutes until well mixed.
  • Stir in the walnuts.
  • Pour mixture into greased cake pan.
  • Bake at 350 degrees for about 55 minutes, or until a knife inserted into center comes out cleanly.
  • Cool on a wire rack.
  • Enjoy!

I really love to bake, but i'm not much of a cook. i went gluten-free about 5 years ago, so have learned to bake with almond flour, coconut flour, chickpea flour, and rice flour. i usually use flax meal or chia seeds mixtures as substitutes for eggs, as i am a vegetarian (but not vegan) although i sometimes use eggs. love this site and all the great recipes! thanks for reading and enjoy your kitchen creations today!
