Healthy Carrot Bread

"I developed this recipe as a healthy treat for my kids--they love it! It could be made a bit sweeter if you prefer by upping the sugar to a full cup."

  • Preheat oven to 350.
  • Place a square of parchment in bottom of a 9” square or round pan. Brush or spray with oil and dust with flour.
  • In a large bowl combine apple sauce, oil, eggs, yogurt, brown sugar and carrot. Let stand for 10 minutes.
  • In the meantime, combine and sift the dry ingredients in a separate bowl.
  • Stir the dry ingredients into the carrot mixture and pour into baking pan.
  • Bake for approximately 20 minutes or until toothpick comes out clean and top is golden brown.

  1. I don't mean to be negative but this recipe is awful and I can't recommend it. I followed the instructions exactly and after 40 minutes in the oven, the bread isn't just moist, it's mushy. Try at your own risk.
     
  2. I did make a few changes (almost forgot the eggs!) Used kefir for yogurt, so increased sugar to 1 cup. Used 1 1/2 C freshly ground w.w. pastry flour, 1/4 tsp nutmeg, 1/2 tsp salt. I had to bake it for 40 minutes and it was still almost too wet underneath. I would leave out the oil and increase my flour to 2 cups next time. Maybe only 1 egg would help too. My 6 yo and I both enjoyed the flavor though. Will try again with the changes.
     
  3. I doubled the recipe, used 3/4 sugar for the entire doubled recipe, and added raisins and walnuts. Moist and delicious!!
     
  4. We loved it. Very very moist. I used fat free yogurt and it was enjoyed very much for breakfast as well as lunchbox treats.
     
  5. This was tasty and my toddler loved it, but it took a lot longer to bake than the instructions. I baked for 30 minutes in an electric oven and the toothpick came out clean but once I cut it, parts were still uncooked. I will cook longer next time. Super tasty though!
