  • In large sauce pan, saute bell peppers in olive oil until slightly tender.
  • Add beans, broth, water, cumin, oregano, pepper, and ground red pepper. Bring to boil over high heat.
  • Reduce heat to low, cover and simmer, stirring once or twice, for 15 minutes.
  • Ladle half of the soup into a food processor or blender and puree.
  • Return puree to the pan and add lemon peel.
  • Ladle soup into bowls and top each serving w/ peppers.

  1. My DH made this while I was out of town (if he can, you can too) and wanted me to give it 4 stars. Must be an easy one! He used all red pepper, no green pepper.
     
  2. Very tasty and quick to prepare. The lemon was a nice touch. The color of the soup isn't the most appealling so the addition of the peppers jazzes it up. I decreased the red pepper to 1/8 tsp and also served with a dollop of sour cream. I wasn't sure when to add the olive oil so I just added it at the beginning.
