Healthy Baked Bean Omelet

"My favorite breakfast. Easy, low-fat, filling, and energizing!!! Also great for an afternoon snack. You can use your favorite brand of baked beans. I personally like the fat-free Heinz in tomato sauce."

  • 12 cup baked beans
  • 4 egg whites
  • 12 cup chopped broccoli

directions

  • Sautee broccoli in a skillet until tender.
  • Add egg whites to the broccoli and let cook until semi-firm. Flip and cook until the eggs set.
  • Add the baked beans in the center and fold.
  • ENJOY!

I often have a combo of steamed broccoli & cauliflower in the frig, & another time I'd like to try it with that combo & the beans & it would really be tasty with some jazzed-up, leftover baked beans, too, though perhaps not quite as healthy for you!   2. I liked this. I love broccoli and I love beans. It's fast and it truly is energizing. I'm definitly having it more often. Instead of fresh broccoli I used frozen and next time I have to spray a bit of pam in the pan before because it was sticky.
