- 1⁄2 cup baked beans
- 4 egg whites
- 1⁄2 cup chopped broccoli
directions
- Sautee broccoli in a skillet until tender.
- Add egg whites to the broccoli and let cook until semi-firm. Flip and cook until the eggs set.
- Add the baked beans in the center and fold.
- ENJOY!

What an easy & satisfying way to kick-start the day! Doubled the recipe for 2 of us! I often have a combo of steamed broccoli & cauliflower in the frig, & another time I'd like to try it with that combo & the beans & it would really be tasty with some jazzed-up, leftover baked beans, too, though perhaps not quite as healthy for you!
