  1. Cook turkey bacon on skillet and set aside.
  2. Saute garlic, onions, and spinach in olive oil and set aside.
  3. Whisk yogurt and eggs together until smooth.
  4. Add cooled off melted butter and whisk.
  5. Mix in salt, pepper, parsley, Italian seasoning, and mozzarella cheese.
  6. Dice bacon and mix in bacon and sauteed vegetables to egg mix once they have cooled to room temperature.
  7. Spray 9 inch glass pie dish with cooking spray and add mixture.
  8. Cook at 350 for 20 minutes.
  9. Slice tomatoes and place on top of quiche.
  10. Cook another 20 minutes at 350.
