    Directions:

      Pound ginger and rub all over chicken.
    2. 2
      Boil water, add chicken and boil for 15 minutes, cover pot tightly and turn heat off and let it cook slowly for 1 hour.

      Turn on flame again, when it start to boil take out chicken and rinse it under cold water, then set aside Wash rice and drai n.

      Heat oil and fry garlic and celery for 2 minutes.

      Add rice and stir until rice is covered with oil.

      Pour in broth and reduce heat to cook.
    7. 7
      Mix all the sauce ingredients together to make sauce.

      If you love chicken and rice this comes together for a wonderful meal. Delicious! I have to thank Liara for being so helpful when I e mailed her for some advice in the making. I made as posted - started with two tablespoons of fish sauce - and yes Liara three is good even for the uninitiated! I want to try this with chicken breasts. Thank you Liara for a recipe that will be used again and again.

      The rice is what distinguishes this recipie from most others, the simplicity of it all and the balnce of flavours has made this my wife\'s favorite meal! Tried chilli with the ginger to rub on the chicken for a hotter taste, and mixing coriander with the sauce which is not the \'authentic\' way but is still great. If you are into increasing the heat add a sliced chilled cucumber to balance your palate!!! FANTASTIC!!!
