- 2 boneless skinless chicken breast halves
- 354.88-473.18 ml marsala wine
- 2 clove garlic, chopped
- 2.46 ml dried thyme
- salt & pepper
- 14.79 ml olive oil
- 14.79 ml red wine vinegar
- 44.37 ml fresh grated parmesan cheese
- 1 head romaine lettuce
- 0 large red onion, sliced thin
- 59.14 ml black olives, sliced
directions
- Place chicken in a bowl with a lid, add marsala to cover.
- Add garlic, thyme, salt& pepper.
- Marinate in fridge overnight.
- Grill chicken (indoor or outdoor grill), basting often with marinade.
- Dressing: mix olive oil, vinegar, and parmesan.
- Toss shredded lettuce, red onion, and olives.
- Drizzle with dressing and top with slices of grilled chicken.
