Grilled Black Bean Burger Quesadillas

We loved this recipe! I made one big quesadilla on the griddle and then cut in pieces after cooking. Topped with shredded lettuce, salsa and a blop of sour cream. Thanks for posting the recipe.

Ingredients Nutrition

  • 2 Morningstar Farms spicy black bean burgers
  • 12 cup salsa
  • 1 cup shredded tex-mex cheese
  • 2 teaspoons taco seasoning
  • 10 (8 inch) flour tortillas
  • 1 tablespoon butter, melted
  • 2 12 cups lettuce, shredded
  • 2 tablespoons chopped bell peppers


  1. In a medium bowl, toss together veggie burgers, salsa, cheese, and seasonings.
  2. Use pizza cutter to cut tortillas into 7 inch triangles.
  3. Place about 2 tablespoons burger mixture in the center of each triangle.
  4. Fold corners of large triangles over filling, completely enclosing filling and making small triangles.
  5. Secure with toothpicks, and brush with butter.
  6. Place on grill with toothpick sides up.
  7. Grill at 375 degrees for 9-12 minutes, or until cheese completely melts.
  8. Arrange on top of shredded lettuce, and sprinkle with bell pepper.
