ingredients
- 177.44 ml salad dressing (Miracle Whip Lite)
- 4.92 ml prepared mustard
- 2.46 ml celery seed
- 2.46 ml salt
- 0.61 ml pepper (to taste)
- 946.36 ml potatoes, cooked & cubed
- 2 hard-boiled eggs, chopped
- 1 medium onion, finely chopped
- 2 celery ribs, thinly sliced
- 118.29 ml pickle (chopped gherkin)
directions
- Combine salad dressing, mustard, celery seed, salt and pepper.
- Add remaining ingredients; mix lightly.
- Refrigerate until ready to serve.
- Best if potato salad is stored in the fridge for at least a couple of hours before serving to let the flavours combine.

We loved the chopped celery and pickles in this salad. They added flavour and crunch...delicious! I doubled the recipe fully, then added 2 extra eggs because we like an eggy potato salad. The salad seemed a bit dry with the amount of dressing given, so I added some milk to moisten. A wonderful salad that I'll be making again. Thank you, Nibblets.

<p>I just love to cook and bake for my family. I especially take pride in my Christmas baking. That time of year in my home is always a big deal. Christmastime isn't the same without all the wonderful smells, decorating and warm, fuzzy feelings the season brings with it. <br /> <br />I must say, I do enjoy searching for old-fashioned type recipes or comfort foods, rather than the artsy type recipes. I'm a nostalgic one indeed! :)</p>
