Grandma Deana's Mashed Potato Casserole

"My mom makes this a lot and it seems like it gets better each time. So delicious. Mashed potatoes are good anyway but these are extra special. This can also be prepared up to a couple of days ahead of time and then put in oven when needed."

  • Pre-heat oven to 350º.
  • Boil peeled potatoes in large pot of boiling water for 20 minutes.
  • Mash with potato masher.
  • Stir in salad dressing, cream cheese, onion powder, salt and pepper.
  • Mix until light and fluffy.
  • Spoon in 1/2 quart casserole.
  • Sprinkle with paprika.
  • Bake at 350º for 45 minutes.

  2. Mayonnaise is the secret ingredient in this recipe. I used regular mayo (instead of Miracle Whip--just a personal preference). This is a great variation on an old classic. Super simple and super delicious. Made for My Three Chefs/The Great Idaho Potato.
