This was a great lunch that we ate during the week. I only used the yellow didn't have any white. I also used a red bell pepper. Made for PAC Spring 2013.

  1. Mix all the vegetables and set aside. In a saucepan, mix vinegar, oil and sugar; bring to boil. Coll and then pour over other mixture. Marinate, covered for AT LEAST 24 hours.
