- 2 cups all-purpose flour
- 2 cups quick oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon ground nutmeg
- 1⁄2 teaspoon salt
- 1 cup packed light brown sugar
- 3⁄4 cup granulated sugar
- 3⁄4 cup butter, softened
- 1 1⁄2 teaspoons vanilla extract
- 2 large eggs
- 1 cup dried sweetened cranberries
- cooking spray
- 1 1⁄2 cups powdered sugar
- 3 tablespoons fresh lemon juice
- 2 teaspoons grated orange rind
directions
- Preheat the oven to 325°F
- Combine the flour and the next 6 ingredients (through salt) in a bowl.
- Combine the brown sugar, granulated sugar, and butter in a large bowl, and.
- beat with a mixer at medium speed until well blended.
- Add the vanilla and eggs and beat well.
- Gradually add the flour mixture and cranberries. Beat at low speed until combined.
- Shape the dough into 1-inch balls.
- Place balls 2 inches apart on baking sheets coated with cooking spray.
- Bake at 325°F for 15 minutes or until almost firm.
- Cool completely on a wire rack.
- GLAZE: combine the powdered sugar, lemon juice, and orange rind in a bowl, stirring with a whisk.
- Spoon the mixture into a small zip-top plastic bag.
- Snip a small hole in one corner of the bag and drizzle glaze over the cooled cookies.

This is a very nice crispy cookie, not too sweet and it feels really healthy :) DD and I made half a batch, since I only had one cup of oats in the pantry, we will definitely make the full batch next time! She has taken most of them with her as she has left for a few days holiday and these will make nice snacks in the car! We did find that they spread a bit, hope they are supposed to? We had given them space on the tray though, so it was fine.<br/>Thank you, chefamarie, a lovely recipe made for I Recommend tag game

The kids in our park mobile home park were doing a bake sale (mostly cookies & bars) to raise money for something or other & some of us volunteered to make a variety of cookies ~ This was one of a handful of ones I made for them! These turned out to be extremely tasty, & I'll be making them another time just for ourselves to enjoy ~ Really liked the citrus & cranberry combo!
