My mother used to make this for Sunday breakfast - it goes well with almost any topping you like.

- Heat the oven to 425.
- Melt the butter in a 10 inch, ovenproof skillet (cast iron is best; I've also used a pie pan).
- Add the remaining ingredients and stir to blend.
- Bake 12-15 minutes, or until risen and golden.
- Serve with powdered sugar, brown sugar, jam, syrup- whatever suits your fancy.
