My mother used to make this for Sunday breakfast - it goes well with almost any topping you like.

Very nice recipe. Simple to make and very tasty. I served with sweetened strawberries. I mixed all the ingredients in a bowl and baked in a pie pan. Beautiful presentation.

  1. Heat the oven to 425.
  2. Melt the butter in a 10 inch, ovenproof skillet (cast iron is best; I've also used a pie pan).
  3. Add the remaining ingredients and stir to blend.
  4. Bake 12-15 minutes, or until risen and golden.
  5. Serve with powdered sugar, brown sugar, jam, syrup- whatever suits your fancy.
