Garbanzo Olive Salad

• Serves: 4

ingredients

• 2 cups canned garbanzo beans, drained and rinsed
• 2⁄3 cup black olives, quartered
• 1⁄2 cup red bell pepper, diced
• 1⁄3 cup green onion, sliced
• 1⁄8 cup cilantro, chopped
• 2 tablespoons extra virgin olive oil
• 1 1⁄2 tablespoons balsamic vinegar
• 1 hard-boiled egg, diced
• salt and pepper

directions

1. In a medium bowl combine all ingredients except egg.
2. Toss well.
3. Gently stir in egg.
4. Serve.
