A tasty side dish that is usually served in late summer or early fall.
- 1⁄4 cup cornmeal
- 1⁄4 teaspoon sugar
- 1⁄2 teaspoon salt
- 1 green tomato, firm, cut into 1/2 inch slices
- 4 slices bacon
- 2 tablespoons peanut oil
- coarse salt
- Combine cornmeal, sugar and salt.
- Dip each tomato slice into cornmeal mixture.
- Fry in hot bacon fat and oil until brown, turning once during cooking. Drain on paper towels.
- Sprinkle with coarse salt and serve hot.
