  • Add round steak to a 3 quart slow cooker.
  • In a small bowl, combine the tomatoes, onion, garlic, and seasonings; pour over the steak.
  • Cover and cook on LOW for 8-9 hours or until meat is tender.
  • Remove meat from slow cooker.
  • Add beans to tomato mixture; cover and cook on HIGH for 30 minutes or until beans are heated through.
  • When cool enough to handle, slice meat (or shred).
  • In individual bowls, layer the rice, meat, and bean mixture.
  • Top with cheese, olives, onions, and guacamole.

  1. Delicious, very flavorful, not to spicy, quick and easy recipe to prepare that my whole family enjoyed. I made this exactly as written until it came time the final preparation. After I roughly shredded/chunked the beef, rather than layer it in bowls as instructed, I mixed the beef in with the bean mixture in the pot to keep the beef nice and moist, then served in bowls over white rice letting each diner select condiments of their choice. My top round steak weighed 1.88 pounds and was done and easy to shred in 6.5 hours. For my crockpot, the recipes recommended cooking time would have been far too long and the meat would have been dry I'm afraid. It's important to be familiar with your slow cooker, because they all seem to be different when it comes to heat levels, and I did cook mine on low the entire time. I will definately be adding this yummy meal to our rotation. From what I can tell, this is perfect as written; I could see no reason for altering ingredients unless you want more heat or spice. Thanks ratherbeswimmin' for sharing. Your recipes are always top-notch!
