      Mix together the cheese, tomato, herbs, seasoning, garlic, and the olive oil. If there's time to spare, let the flavours infuse for 20-30 minutes at room temperature.

      Preheat the sandwich toaster to its highest setting.

      Brush each slice of bread with olive oil. Place the first slice in the toaster (oiled side down) and spread over the cheese mixture, filling the recesses. Cover with the second slice of bread (oiled side up) and close the lid. Cook for 3 minutes until crisp and golden.
