Elsa's Lemon Chicken and Thyme

  • Combine Flour,salt and pepper in a ziploc. Add chicken and shake to coat. Remove chicken and reserve excess flour. In a large skillet warm 1 Tbsp oil over medium heat. Add chicken and brown on one side (5 minutes) then flip chicken and brown on the other side(5 minutes) Transfer chicken to plate. Coarsely chop onion. Add margarine to skillet, when it has melted add onion soften for 2-3 minutes add reserved flour cook for one minute. Add broth,2 Tbsp of lemon juice and thyme and bring mixture to a boil. Stir constantly. Return chicken to skillet. Cook until chicken is tender about 5 minutes. stir remaining juice into sauce. Cook 2 minutes. Enjoy!

  1. Easy to prepare and very good, served on rice with green beans and a tomato bake, this was an excellent supper. I'm sorry my photo doesn't do it justice! I cut my chicken into bite-sized pieces, they were flavoursome and tender in the delicately flavoured sauce. Very nice, thank you hope2day! Made for PAC Fall 2009
     
  2. We had this for dinner tonight and it was really yummy. It went together very quickly but tasted like I had spent a lot of time preparing dinner. My favorite kind of dinner - easy, quick and delicious! I served this with fresh steamed broccoli and buttermilk mashed potatoes...think we'll probably have this again next week **can't wait** Thank you for sharing.
