Egg in a Potato Nest

"Source: Eggs Nature's Treasure This is a very simple and quick dish which would be good for breakfast or even a light lunch. It would be easy to jazz it up with some seasonings and bacon or ham but it's also good just as is."

  • Combine 1 cup of cheese and cooked hash brown potatoes.
  • Grease 4 ramekins and divide cheese/potato mixture among them making a nest.
  • Crack 1 egg in each next.
  • Pierce egg yolk with toothpick or fork (very important or eggs will explode and make a mess of your microwave).
  • Microwave on medium (50%) for 5 minutes.
  • Sprinkle with remaining cheese.
  • Let stand 3 to 4 minutes.

  1. made these for breakfast this morning. worked out great. I liked them so much I decided to try a couple of minor variations as well. first time made as written. Second time I shredded fresh potatoes and lined a skimming laddle to make a nest and flash fried them, added a few chives to nest and served with medium poached egg. third time i did the same thing but made deviled eggs and put both halves back together, making an egg surprise. some I served plain, while others where served with milk gravy. served all with bacon on the side. I imagine this would be great with quail eggs. I'll be trying that next time if I can get the quail eggs. Made a very different presentation on the table.
