Egg in a Mug (Very Healthy!)

"This is my every morning at work healthy breakfast and its so good. It can be changed a million ways. I always use laughing cow, but change flavors. And I change the veggie from spinach to chopped green peppers."

  • I use disposable Styrofoam cups at work.
  • Drop in one egg and one egg white and beat.
  • Add chopped Canadian bacon or ham and veggies and mix.
  • Add Laughing Cow cheese.
  • Microwave for 1 minute.
  • Stir.
  • Return to microwave for 45 seconds.
  • And its ready to go.

  1. I can't believe there aren't any reviews of this. I have loved this recipe for years and only came back to the original post (I have it printed and memorized) to add it to a new food plan I'm working on. This is perfect. I no longer use meat in it but whatever veggies and fiber I'm needing that day.
