  • Cut chicken into 1/2 inch cubes.
  • Begin cooking chicken in large skillet.
  • Boil 2 cups of water and add rice.
  • Once chicken is done add 1/2 cup of water to skillet and begin adding your seasoning packets.
  • Reduce heat and let simmer.
  • Add in can of black beans, drained and corn drained into skillet, heat through.
  • Once rice is finished add it to the skillet with the rest of the ingredients.
  • Stuff tortillas with the filling, add cheddar cheese and salsa if desired.
  • Enjoy!
