Easy over the Top Baked Beans

"I made these for a cowboy themed party, and they were a hit. I have a great meat place near us that sells uncooked smoked pork chops but I'm sure it could be substituted with bacon, or other pork/meat. (Personally, I think the smoked pork chop is the bomb in this dish) Other than a bit of prep, the slow cooker does all the work... awesome. And cooking times are approximate, I've served it in an hour. Enjoy."

  • Sautee onions and peppers in EVOO over medium heat until soft, about 10 minutes. Remove from pan and set aside.
  • Sear pork chops on high heat for 2-4 minutes per side. Just until you get a nice brown color. It is not meant to be cooked through.
  • Dice the chops into bite size pieces.
  • Place all ingredients into a 6 quart slow cooker and give it a stir.
  • Cook on low for 6-8 hours or on high for 3-4 hours.

<p>I post what I cook. It's an eclectic, and hopefully simple collection of recipes. I'd love to post most of what I cook, but frankly I'm not good at the measurements and I tend to be a 'add a dash of this and that' kinda cook.&nbsp;As a&nbsp;result, I can be a little lazy in posting recipes.&nbsp;I strive to make large meals that don't cost a lot, I've got 4 kids. Yes they eat what I post :)&nbsp; My main goal these days is to get the most out of what we pay for groceries...with 5 large eaters &nbsp;me, we're&nbsp;on a 'below low income level' budget, it's important to buy cheap and cook around the ingredients. Some recipes come from&nbsp;splurges ;)&nbsp; Use the recipes as a guidline and modify to suit your tastes.</p>
