Dressed-Up Red Beans and Rice

- 14.79 ml olive oil
- 118.29 ml onion, diced
- 118.29 ml green bell pepper, diced (about 1/2 medium)
- 4.92 ml jalapeno pepper, minced (about 1/2 pepper)
- 2.46 ml garlic, minced (about 1 clove)
- 44.37 ml sugar
- 1.23 ml black pepper
- 22.18 ml vegetable oil
- 78.78 ml apple cider vinegar
- 425.24 g can kidney beans, drained and rinsed
- 473.18 ml kale, chopped
- 473.18 ml cooked rice
directions
- Heat olive oil in a medium nonstick skillet over medium heat.
- Add onion, bell pepper, jalapeno, and garlic to pan. Sautee for 3 minutes or until soft.
- Stir in sugar, pepper, oil, and vinegar. Allow to come to a boil, then add beans and cook for 3 minutes or until beans are heated through.
- Stir in kale. Cook for 3 more minutes or until kale is wilted. (The kale should still be bright green, not dull and turning brown.).
- Divide bean mixture in half and serve each half over one cup of rice.

I am, to be honest, somewhat intimidated by the community aspect of this site. I don't really wish to be overly involved in it. (Sorry.) I'm here because RecipeZaar allows me the chance to find a wide variety of excellent recipes, not to be social. For me, this site is a valuable resource... not a community.

I tend toward fantasy and science fiction, though lately I've taken a turn into nonfiction about ancient Greek religion.
