- 3 large baking potatoes
- 4 tablespoons Dijon mustard
- 2 tablespoons green onions, finely chopped
- 1 tablespoon parsley, finely minced
- 1 teaspoon black pepper

- Clean the potatoes and cut into ¼ inch cubes.
- Preheat the grill and spray with cooking spray.
- Place the potatoes in the grill and lightly coat with the Dijon mustard.
- Sprinkle with the green onions, parsley and pepper. Grill for 7-9 minutes or until tender.
