- 453.59 g dried split peas, sorted and rinsed
- 118.29 ml pearl barley
- 1892.0 ml water
- 2 bay leaves
- 14.79-44.37 ml salt, to your liking
- 14.79 ml soy sauce
- 14.79 ml fresh thyme, chopped (or 1/2 Tablespoon dried)
- 9.85 ml garlic, minced
- 2.46 ml dried sage
- 0.61 ml cumin, ground
- 354.88 ml carrots, diced
- 157.80 ml onion, minced
- 78.78 ml celery, finely diced
- 59.14 ml scallion top, thinly sliced
directions
- In a large pot or saucepan, combine first 10 ingredients. Bring to a boil over high heat. Reduce the heat to a bare simmer, cover, and cook for 1 hour, stirring occasionally.
- Stir in the carrots, onion, and celery. Cover and simmer until the vegetables are tender, 20-30 minutes more. Discard bay leaves. Ladle into warmed soup bowls and garnish with the scallion greens.
