Curried Chicken (Trinidad Style)

- 1360.77 g whole chickens
- 4.92 ml minced garlic
- 29.58 ml minced green seasoning (found in most West Indian grocery stores. If unable to find minced thyme and green onion should work)
- 4.92 ml salt, to taste
- 4.92 ml hot pepper
- 29.58 ml vegetable oil
- 44.37-59.16 ml curry powder
- 118.29 ml chopped tomato
- 118.29 ml chopped onion
- 118.29 ml hot water
directions
- Cut chicken into small pieces and season with garlic, green seasoning, salt and hot pepper.
- Marinate for 30 minutes or more.
- Heat oil in an iron pot or skillet.
- Mix curry powder with 1/4 cup of water until smooth; add to hot oil and cook 2 minutes.
- Add chicken and stir to coat in curry; cook until all water dries out; stir well (about 10 mins).
- Add tomatoes and onion; cook for a minute; stir in 1/2 cup hot water.
- Lower heat to medium; cover and cook until meat is tender; add more water if more sauce is necessary.
- Adjust salt and hot pepper.

This was sooo good! Because of the area I live in (I guess) I couldn’t find green seasoning or hot peppers or thyme to replace the green seasoning. So instead I only used the green onion, cayenne, and garlic salt to marinate the chicken. Then while cooking I ended up adding cumin and extra salt. I also added green peppers because I like vegetables. :) There’s a lot of changes but I had to make it work to what I had!
