Crushed Goat's Cheese With Pepper and Black Cherry Jam

ingredients
- 12 ounces soft goat's cheese
- 1 teaspoon black peppercorns, crushed
- 2 tablespoons lemon juice
- 1 lemon, zest of
- 1 teaspoon thyme leaves
- 2 tablespoons virgin olive oil
- 1 French baguette
- 4 1⁄2 ounces black cherry jam
directions
- Place the cheese in a bowl, add the pepper, lemon juice and zest and crush together with a fork.
- add thyme and season with coarse sea salt to taste.
- leave to stand for 1 hour to allow the flavours to meld.
- spoon the cheese into serving dish, drizzle over the olive oil and serve with the french bread, toasted and sliced, and the black cherry jam.

This was excellent; another way to enjoy the tang of goat cheese! I reduced the recipe by 2/3's, using 4 oz. of goat cheese crumbles. I used Polaner black cherry all-fruit spread. This goes together rather quickly, with ingredients I normally have on hand. Thanks for sharing a wonderful recipe; I'll be making it for my friends soon! Made for ZWT 5.

Hello, thought I should update this page a wee bit now we have a new furbaby called Bismila as well as our beloved Maddie who is the star of the photo. I live with my husband Keir in the North East of Scotland between Inverness and Aberdeen, it is very beautiful here. My DH is a keen salmon fisherman and is in the right place to do this! I ran my own pubs and restaurants for many years until arthritis made catering just too much for me, I am 'semi' retired now and can't seem to drag myself away from this site. I have met some wonderful people here and made good friends for which I am eternally grateful.
