Crunchy Chicken Casserole

  • Preheat oven to 375 degrees fahrenheit
  • Put oil in a large frying pan and brown ground chicken with chopped onion and cook until onion is translucent.
  • Add tomatoes to the mixture along with the tomato paste and cook until most of the liquid has evaporated and the mixture is nice and thick and set aside.
  • Put ground chicken mixture in a 1 1/2 quart casserole dish layering on the bottom of the dish
  • Cook macaroni noodles for 8 to 10 minutes in boiling salted water and then set aside
  • In a small saucepan combine butter, flour and milk to make a roux and then add grated cheese and cook until cheese is melted and mixture is smooth
  • Mix in cheese sauce with macaroni and then put macaroni on top of ground chicken
  • Mix together butter, corn chips and bread crumbs with a pastry cutter and then sprinkle on top of macaroni noodles
  • Top with grated cheese and then put in the oven for approximately 15 minutes or until cheese is nicely melted.
