Crock Pot (Slow Cooker) Macaroni and Cheese (Oamc)

- 2 lbs uncooked small pasta noodles, should have a cooking time around 13 minutes
- 2 (12 ounce) cans evaporated milk
- 1 1⁄2 cups half-and-half
- 6 cups milk
- 1⁄2 cup flour
- 4 cups sharp cheddar cheese, shredded
- 2 cups mild cheddar cheese, shredded
- 16 ounces Velveeta cheese, diced
- 1 cup parmesan cheese
- 8 tablespoons salted butter, cut up
- 1 teaspoon onion powder
- 3⁄4 teaspoon garlic powder
- 1⁄2 teaspoon white pepper
- 1⁄2 teaspoon salt
directions
- Whisk flour with 1 cup of milk until smooth.
- Mix everything in (very large) crock pot.
- Cook 3 to 4 hours on low, or until sauce comes together and pasta is tender. Stir every 30 to 60 minutes, if possible.
- Freeze leftovers in 2 serving portions.
- Reheat in microwave safe dish on defrost for 20 minutes, stirring every 5 minutes. At this time, the mac and cheese should be mostly defrosted. Defrost for another 10 minutes or so, stirring every 2.5 minutes or until hot. (I have found this is the best way to reheat frozen mac and cheese with no seperation of the sauce.).

Wow! This was yum-yum! I needed a good crock-pot mac n cheese due to my oven being occupied and this one really delivered! I read all the recipes for crock-pot and mac and cheese and decided on this one. I liked the combination of cheeses and I thought the flour and milk would make a great thickening agent. I did cut the recipe in half and cooked my elbows for 5 minutes. I did not have velveeta but did have Hoops Cheddar and used that. I used a really good aged white cheddar and gruyere (what i had on hand) and despite my better judgement added all the liquid (1/2 recipe) that it called for. I did not spray my crock pot and cooked it on the med-high setting for about 2 1/2 hours. Cheesey and brown on the edges of the crock pot-just used a butter knife to scrape it off and mix it in. I did stir this often. It went great with should be illegal oven bbq ribs. Fantastic meal-served a ton-even though it was half recipe and we still had leftovers. I will never make mac n' cheese in the oven again. Thanks-great recipe!

The girls take a lot of time, but they are worth it!<br /><br />The dogs are my babies too--though they are about as big as I am! It has been a bit of a challenge at times, as they both have severe hip dysplasia, but they are great dogs and I have learned so much about arthritis! I have also learned a lot about cancer, as our female was diagnosed with bone cancer. She is now on three, but doing great post-chemo. They are both great with the kids and love to ***** little hands and feet! and noses! and ears! and...! <br /><br />I participated in the 2006 Fall PAC--and what a great game/program/thing!
