ingredients
- 1 egg
- 3⁄4 cup milk
- 1⁄4 cup unsalted butter, melted
- 1 tablespoon green bell pepper, minced
- 1 tablespoon onion, minced
- 1 tablespoon pimiento, minced
- 1⁄4 cup American cheese, grated
- 1⁄2 cup cheddar cheese, grated
- 1 1⁄4 cups all-purpose flour
- 1⁄2 teaspoon salt
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 2 tablespoons yellow cornmeal
directions
- Preheat oven to 400°F Coat 12 muffin cups with nonstick cooking spray.
- In a small bowl, mix eggs, milk and butter.
- In a large bowl, combine remaining ingredients.
- Add the egg mixture to the flour mixture and stir just to mix (there will be lumps).
- Pour into muffin cups and bake for 25 to 30 minutes, or until done.
- Turn out onto wire rack and cool slightly.
