I had to make this because it sounded so interesting! And it was- I followed the instructions to the letter and it turned out perfect. I did have to bake it a bit longer to get the middle to cook, and the outside got a little dark. But in the finished product, the darkness didn't effect the taste or appearance. I love the coconut in the cake - very good texture and flavor. And how can you go wrong with cream cheese frosting?!? :) Overall, the cake was nice and high, very moist and a wonderfully unique taste. Thanks so much! I will certainly be making this again soon.
