- 1⁄3 cup heavy cream
- 1⁄4 cup cider vinegar
- 2 tablespoons olive oil
- 2 tablespoons sugar
- 2 teaspoons Dijon mustard
- 1⁄2 teaspoon kosher salt
- 4 cups coleslaw mix
- 2 granny smith apples, grated
- 1⁄4 cup fresh parsley, chopped
directions
- Whisk cream, vinegar, oil, sugar, dijon and salt together in a large bowl.
- Add coleslaw mix, apple, and parsley; toss with dressing to coat.
- The slaw may be chilled for up to one hour before serving.
