Directions

  1. Preheat oven to 350 degrees.
  2. Mix together sugar, salt and cornstarch. Add milk and corn syrup, cooking on medium heat until thick.
  3. Temper the egg yolks by stirring in a little of the milk mixture at a time into the beaten egg yolks. Add egg yolk mixture back to milk mixture and cook 3 minutes, stirring constantly.
  4. Remove from heat and add butter and vanilla, coconut or banana.
  5. MERINGUE.
  6. Beat egg whites until stiff. Add sugar slowly, continuing to beat.
  7. When stiff, put on pie and bake pie for 12 - 15 minutes.

My mom is not feeling well and coconut cream pie is her favorite. She said it was the only thing that tasted good to her and she loved it. I used Pillsbury's refrigerator pie crust and had trouble with my meringue so I topped the pie with some coconut. Very easy to make and cant wait to try it with bananas. I made a banana cream pie, and this was the Best banana cream we have ever had. The flavor was excellent, made it exactly according to the recipe. Definately a winner. Thanks for the recipe.
