Coconut Cream Pie from Chancy's Catfish Shack

"My mother Melinda is the manager for Chancy's Catfish Shack in Plant City, Florida. If you're ever in the area stop by as her cooking is to die for, comfort food at it's best. She brought alot of her recipies to the restaurant to expand the menu :-) I've written this recipe as best as it was related to me so I hope it's ok :-)"

  • On the stove (I suggest a double boiler at high heat or low/medium heat for a regular pot) -- Mix sugar, cornstarch, yolks and salt in a pot. Slowly stir in the milk until it thickens. Do it slow. After it thickens, add the coconut. Pour into the pie shells and let sit overnight in the refridgerator.
  • Combine the confectionary sugar and heavy cream and whip till stiff peaks form. Top pies with whipped cream mixture. Serve :-).

Hello there, I a a mother of 3 Ivy (7/99), Jesse (5/02) and Autumn (10/05). My household is on the Feingold diet ( www.feingold.org ) so I love Recipezaar as I can find most any recipe that I like or would like to try. When I'm not tending to my children I do caning, rush and willlow work and wicker repair for extra money. I also love to garden and have chickens, turkeys, ducks, a goose and quail. We have quite a few rescue cats and I have a formal education as a Licensed Veterinary Technician. I am also a Licensed Wildlife Rehabilitator and have a non-profit 501(c)3 organization. I also am with Chesapeake Bay Retriever Relief & Rescue ( www.cbrrescue.org ). And since they ask about a pet peeve...parents who don't take the time to help their kids and would rather put them on drugs for their behavior rather than trying to alter their diet first to see if that would improve them, and folks who discard animals just cause they aren't convient anymore. Bitchy aren't I? :-)
