Cinnamon & Sugar Pecans

"I found this somewhere on the internet. It sounded worth trying. I love cinnamon & pecans. I might be tempted to add more cinnamon to this. I am just guessing at the cooking time, as you cook until it reaches the hard ball stage."

  • Combine water, syrup & sugar in a large heavy pan.
  • Cook over medium heat to firm ball stage (242F).
  • Remove from heat & stir in cinnamon.
  • Keep stirring till the syrup stops boiling.
  • Add nuts all at one time.
  • Stir untill nuts are completely separated & sugar is crystalized.
  • Pour onto parchment lined cookie sheet.
  • Cool & store in airtight container.

Chef #8832636. My memebership on this site goes back to the days of recipezaar, so I have seen a lot of changes on the site over the years. I still miss the forums, they had a wealth of information in them, and it was great to be able to connect with other chefs through them. I don't think zmail exists anymore either, so I don't think we have any way of contacting other chefs now. I haven't been on the site much in the last few years, mainly because of the changes. I do still pop in to look for specific recipes. I enjoy cooking, and am passionate about baking.
