  • In a saucepan over medium heat, stir together sugar and half and half.
  • When mixture begins to simmer remove from heat and slowly whisk into eggs. (Pour hot cream mixture slowly, but whisk quickly so that you don't end up with scrambled eggs!).
  • Pour mixture back into saucepan and stir in heavy cream.
  • Continue cooking over medium low heat, stirring constantly until mixture is thick enough to coat the back of a spoon.
  • Remove from heat and whisk in vanilla and cinnamon.
  • Let cool completely in refrigerator.
  • When cooled pour mixture into ice cream maker and freeze according to your ice cream makers instructions.
