These are your basic tacos totally brought back to life with fresh veggies, lime juice, Rotel and beef consommé--so good. My brother-in-law invented them and I tweaked them just a bit. We LOVE them. He makes them with chicken, we prefer beef.

  1. Brown ground beef, drain and set aside.
  2. Sauté onions and bell pepper in a little olive oil until soft.
  3. Add habanero and garlic and sauté a few minutes more.
  4. Add beef back to pan along with all remaining ingredients except for the cilantro.
  5. Sauté beef mixture over med-high heat until almost all of the liquid is gone.
  6. Remove from heat and toss with cilantro.
  7. Serve with your favorite taco toppings.
  8. We prefer the uncooked tortillas from Costco that you heat and cook at home -- they are the best if you haven't had them. Otherwise you can use whatever tortilla or shell that you prefer.

These were quite good; the taco meat was nicely flavored and not overly spicy. For me, the mushrooms just seemed out of place in a taco recipe; I probably would have like it better without the mushrooms.

We left out the peppers and mushrooms - didn't have any on hand - but still thought these were very good. The flavor was great - especially with an extra squeeze of lime juice and a good avocado salad. Thanks for the recipe!

These were very good tacos!! Will be making them again, the only thing I omitted was the mushrooms, I did not have them.
