- 118.29 ml diced carrot
- 59.14 ml diced celery
- 59.14 ml chopped onion
- 4.92 ml butter
- 1419.54 ml chicken broth, chicken -I use Swanson's low sodium, low fat
- 354.88 ml diced cooked chicken
- 4.92 ml salt, optional-personally, i think the broth has enough salt (optional)
- 2.46 ml dried marjoram
- 2.46 ml dried thyme
- 2.46 ml dried parsley
- 0.61 ml black pepper
- 295.73 ml uncooked small egg noodles
directions
- In a large saucepan, sauté fresh carrots, celery, and onions in butter until tender.
- Add broth and chicken. Bring to a boil and then reduce heat and add noodles. Cook for 10 minutes and then add seasonings. Cook for 5 minutes longer. Makes 6 servings.

Yummy and quick to make. Used leftover roasted chicken and organic chicken broth. Sauteed the veggies in a little olive oil instead of butter. Garlic would be a great addition. My son loves chicken noodle soup but I refuse to buy the ickky canned stuff. He ate two bowls of this soup! Will be keeping individual portions in the freezer for his school lunches. Thanks for sharing the recipe! Made for PAC Fall 2007.

I am a grandmother of three, which I watch while their Mother works. I love to try different recipes, especially low-fat and heart healthy. I also do a lot of canning from our garden. We have a few chickens and one dog, also the neighbors cat think they live here on our porch. I guess its more comfortable.
