Chocolate Raspberry Brownies

"I found this in a recipe book called Hometown Favorites from Pittsford NY. You can't beat the combination of chocolate and raspberry! For those of us who love raspberry but don't tolerate the seeds, this is the perfect recipe! It is so yummy!"

  • To make the brownies:.
  • In saucepan, melt butter and chocolate over low heat.
  • Remove from heat.
  • Add sugar, eggs, vanilla and almond extract.
  • Beat in flour just until combined; do not overbeat.
  • Spread batter into a greased 8x8-inch baking pan.
  • Spoon raspberry jam in dollops over batter.
  • Run a knife through batter several times to achieve a marbled effect.
  • Bake at 350 degrees F until tester comes out clean, 25 minutes or so.
  • Remove from oven and cool completely.
  • To make Cocoa Frosting:.
  • In mixing bowl, stir together powdered sugar, cocoa powder, melted butter and vanilla.
  • Stir in enough boiling water to make a frosting of spreading consistency.
  • Spread over cooled brownies.
  • Can score frosting with tines of fork.
  • Cut into bars.

I live near Rochester NY with my husband and our 18-year-old cat, Fluffy. It's actually Fluffy's house, but he allows us to live here as long as we pamper him and feed him generously. Our daughter, Kree, whom some of you know from Zaar, is also living with us again while she begins a new business venture in real estate. She's the one who got me hooked on Zaar and taught me to try new recipes rather than stay in the cooking rut I was in. In my free time I like to take long rides or sit by the water, both of which I find very relaxing. I also like to do counted cross-stitch and read. I dabble in photography, always looking for that elusive 'perfect' shot. I did more cooking before I started working full-time, and plan to again when I retire (still years away, but dreaming).
