Chipotle Cheddar Mashed Potatoes

- 2 lbs potatoes, quartered
- 4 garlic cloves, peeled
- 1 cup shredded white cheddar cheese
- 4 ounces cream cheese
- 1⁄4 cup butter
- 1 1⁄2 teaspoons chopped chipotle chiles in adobo
- salt
directions
- Boil potatoes and garlic cloves in salted water until tender, about 15 - 20 minutes. Drain and mash.
- Add remaining ingredients and stir to blend. Should you like a thinner consistency, add milk.
