Bacon and Cheddar Mashed Potatoes

- 4 large potatoes, peeled and cut into small chunks
- 4 slices bacon, cooked drained and crumbled
- 1 1⁄2 cups sharp cheddar cheese
- 2 tablespoons butter
- 1⁄2 cup milk, half & half or 1/2 cup cream
- salt and pepper
directions
- Boil potatoes until tender. Drain and place in large mixing bowl.
- Add butter and cheese while potatoes are still hot. Add a little milk and start mixer on low. Increase speed and add more milk as needed until potatoes are fluffy and creamy.
- Fold in bacon. Add salt and pepper to taste. Serve warm.
