- 1 lb ground beef, 85/15
- 1 medium onion, chopped
- 2 (16 ounce) cans pinto beans, undrained
- 2 (16 ounce) cans red kidney beans, undrained
- 1 (15 ounce) can tomato sauce
- 1 chipotle pepper, chopped
- 1 teaspoon kosher salt
- 1⁄4 teaspoon ground black pepper
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 1 1⁄2 cups water
- 3 tablespoons cornstarch
directions
- In a large covered pot, brown the beef and onion.
- Drain grease, if needed, and return to pot.
- Add remaining ingredients and stir.
- Bring to a boil, then reduce heat to low and cover.
- Simmer, covered, for 2 hours, stirring occasionally to prevent sticking.
- If needed, thicken with cornstarch mixed with the same amount of water, adding a little at a time and stirring thoroughly after each addition, until desired consistency is reached.
