Chicken With Confetti Corn Sauce

ingredients
- 4 boneless skinless chicken breasts
- 4 slices bacon
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1⁄4 teaspoon chili powder
- 1⁄4 teaspoon onion powder
- 1⁄4 teaspoon garlic powder
- 4 stalks green onions, chopped (for garnish)

Corn Sauce Ingredients
- 4 ounces cream cheese, softened
- 1⁄4 cup milk
- 1 cup sour cream
- 1 tablespoon butter
- 1 small onion, diced
- 1⁄2 red bell pepper, seeded and diced
- 1⁄2 green pepper, seeded and diced
- 1 (11 ounce) can whole kernel corn, well drained
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
directions
- Mix together the salt, pepper, chili powder, and the onion and garlic powder.
- Season chicken breasts with the spice mixture.
- Place chicken on a broiler pan, and broil for 4 minutes.
- After 4 minutes, add bacon alongside chicken on pan.
- Broil, turning chicken and bacon for 10-15 minutes longer, until done.
- Drain bacon on paper towels, and set aside chicken, keep warm.

For Sauce:
- Sauté diced onion and diced red and green bell peppers in butter for about 3 minutes.
- Meanwhile, place cream cheese and milk in a saucepan over low heat.
- Heat, stirring until cream cheese melts; remove from heat.
- Add sour cream, the onions and peppers, corn, salt and pepper.
- Heat corn sauce to serving temperature over medium heat, about 3-4 minutes.
- Slice chicken into 1/4 inch slices. Fan out on serving platter.
- Spoon corn sauce over chicken. Crumble bacon and sprinkle over the top.
- Sprinkle the green onions over the top.

How easy can it get? My daughter's favorite at last night's little fiesta-so much so that her diet went kablooey and she had a second helping. Should have doubled up on the sauce though, not that there wasn't enough mind you, but I caught her scooping it up like it was a meal in itself! LOL, gotta love that girl...ZWT3

Now this is GOOOOOD! I like the ease of preparation, I like the great looks of the finished dish, & I like the taste of it all! Gotta admit that I cut back on the salt, both on the chicken & in the sauce, & I also used only 2 slices of bacon. In spite of all that, the chicken was OUTSTANDING, & considering the chef, it was almost like 'magic [at least in its affect on my dinner mates ~ rave after sickening rave]!' Recently moved to New Mexico from South-East Texas. What can I say, I LOVE to cook! My screen name came from my husband Bert.
