I love new appetizer recipes especially ones my kids will eat happily. This recipe is from Rachael Ray's magazine June/July 2011 by Esther Choi.

Made these just for the 2 of us to enjoy for supper, & they're great, especially with the peanut sauce, which makes 'em even more unusual & enjoyable! They are definitely on my kitchen schedule to include on my finger food counter later this month when I host another of my monthly meetings! A keeper of a recipe, for sure!   1. Mix chicken, cilantro, breadcrumbs, onion, garlic, salt and pepper.
  2. roll into 1-tbsp. balls.
  3. In medium skillet, heat oil over medium heat. Add meatballs and cook through, 6 to 8 minutes.
  4. Meanwhile, mix remaining ingredients (except peanuts) and warm in microwave.
  5. Toss meatballs with half of sauce and sprinkle with peanuts. Serve on toothpicks with remaining sauce for dipping.
