- 3 slice bacon, chopped
- 59.14 ml onion, chopped
- 59.14 ml red bell pepper, chopped
- 29.57 ml celery, chopped
- 283.49 g can condensed chicken broth
- 236.59 ml water
- 3 potatoes, peeled and cubed
- 473.18 ml half-and-half cream
- 1 rotisserie chicken, meat removed
- 473.18 ml corn, frozen
- 9.85 ml sugar
- 0.61 ml cayenne pepper
- 4.92 ml hot sauce
- 29.57 ml parsley, chopped
directions
- Fry bacon in frying pan.
- Remove and save for later.
- Add onion, red pepper and celery to drippings and saute until onion is translucent.
- Bring chicken broth and water to boil.
- Add potatoes and simmer 5 minutes.
- Add half & half, chicken meat, onion mixture from frying pan, corn, sugar, cayenne pepper, hot sauce and parsley.
- Simmer 10 minutes and allow flavors to combine.
- Salt and pepper to taste.
- Serve hot.
