- 4 bone-in chicken breast halves, with skin
- 22.18 ml chopped fresh parsley (or store parsley)
- 44.37 ml olive oil
- 14.79 ml minced onion
- 1 clove crushed garlic
- 4.92 ml dried thyme
- 2.46 ml salt
- 2.46 ml ground black pepper
- 2.46 ml dried rosemary, crushed
- 1.23 ml ground sage
- 1.23 ml dried marjoram
- 0.61 ml hot pepper sauce
directions
- Make basting sauce by combining olive oil, grated onion, garlic, salt and pepper, herbs, and hot pepper sauce.
- Turn chicken breasts in sauce to coat thoroughly.
- Place skin side up in a shallow baking dish.
- Cover.
- Roast at 425 degrees, basting occasionally with pan drippings for about 35-45 minutes.
- Remove to warm platter, spoon pan juices over, and sprinkle with fresh parsley.
