  • Remove the skin from the chicken. Cut or tear the chicken into large strips.
  • Cook the Spanish rice according to its instructions.
  • Dice the onion and cilantro.
  • Cut the avocados into medium sized cubes.
  • Add the chicken strips, tomatoes, onion and cilantro into a large pot with the chicken broth. Bring to a boil.
  • To serve, put some of the Spanish rice into a soup bowl and add some soup. Top off with the avocados.
