  1. Place oil, butter, potato, carrots, and celery in a large pot and cook on medium heat for 5 minutes, stirring frequently.
  2. Add salt, pepper, and poultry seasoning.
  3. Add flour to the pan and cook 2 minutes.
  4. Stir in broth; bring to a boil.
  5. Add chicken and stir.
  6. In a bowl, combine biscuit mix and water.
  7. Drop prepared mix into the pot by tablespoons.
  8. Cover, reduce heat to medium low, and cook for 8 minutes.
  9. Remove cover; give the mixture a few good stirs.
  10. Stir in peas.
  11. Serve piping hot.

Really good recipe! This was so simple and fast to make. I would suggest using a reduced sodium chicken broth in this recipe. I used low sodium broth, and I thought the spices were just right.
