Chatahoochee Rice

"This recipe was clipped from an October 1996 issue of the Houston Chronicle. It came from a '70s cooking class at Verlyn Campbell's cooking school. This rice dish has great flavor and texture and is great with grilled chicken. I'm posting the recipe in it's original version, although when I make this I cut way back on the onions."

  • In a large saucepan, combine rice, water, salt, 1 teaspoon butter, and vinegar. Cook according to directions on rice package. Set aside, keeping warm.
  • Over medium-high heat, melt 1/4 cup butter in a large skillet. Add carrots, onions, cashews, and peas. Cover and cook 5 minutes.
  • Add vegetables to rice and stir to combine. Serve immediately.

  1. This is really good!! I forgot to get carrots so I used baby carrots and cut them up as much as I could without cutting off a finger!! Was surprised by the addition of the cashews, the flavor blended well with the other ingredients. Made for 1-2-3-Hits Tag December 2009.
     
  2. Made this the other day when my vegetarian son & DIL were over! Made with the nuts & sweet onions! Then I divided the whole thing in half & added some chopped BBQ chicken to half of it! Worked great both ways, & my DIL left with a copy of the recipe! Definitely a winning recipe! Thanks for sharing it! [Made & reviewed in Zaar Stars recipe tag]
     
  3. I wanted this to be a main dish, so I stirfried cubes of chicken before adding the onion and carrots. This was a delicious way to cook rice, I'll remember this even if I'm not making this actual dish! I had asparagus I wanted to use, so I added them towards the end of the cooking time, and the peas right at the end, just before I tossed everything with the rice. My only real change, omitting the cashews, simply because my younger daughter doesn't tolerate them well. I will certainly do this again with the cashews though, I was sorry to leave them out!<br/>Really enjoyed this simple dish, loof, made for PRMR tag game. Thank you!
     
  4. East West fusion at it best. This is a very versatile recipe you could add pretty much any veggie you might have at hand, T added a tint bit of broccoli and even 2 small veggie sausage patties to make it a one pot full meal deal. The cashews, BYE, are purely fabulous. Thank you loof :D
     
  5. Reviewed for Aus/NZ Forum Recipe Swap July 2011- this was a really simple rice dish with loads of veges and flavour. I liked the addition of the cashews. Kind of reminded me of a fried rice dish...but more like steamed rice with veges. Really made more than 4 serves for us. Served with some pan grilled chicken breadless shnitzel pieces for a delicious dinner. Photo also posted
